Halibut Olympia

I have been posting only my own recipes lately and have joined in another recipe swap for July on recipezaar, so I will be posting a few recipes over the next month that will be from zaar members. This was the first one I made from the group I am in and it was excellent I made it with sea bass and cod as I could not get halibut yesterday and it was really good. I will look forward to trying it with halibut next time as this is favourite of mine, I also used panko flakes instead of breadcrumbs, it was a delicious recipe that was enjoyed by all. Ingredients

2-3lbs Halibut fillets (or other white fish)
Johnny's seafood seasoning, to taste
1 Cup plain fine breadcrumb
1 Cup sour cream
2 Cups mayonnaise
1 Bunch chopped green onion
7-8 Pieces crumbled cooked bacon
1/2 Teaspoon garlic powder

Method

1. Place filets in a baking dish and sprinkle with seafood seasoning and half of the bread crumbs.

2. Mix next 5 ingredients together and completely cover the filets with the mixture.

3. Finish by covering the topping with more breadcrumbs.

4. Bake at 350 for approximately 45 minutes or until the fish is done. I baked mine for only 30 Min's as I found this was all they needed.

I served mine with door stop fries and pureed peas, so serve with whatever you enjoy.
