Carrot Satay Meatballs (Using Vegemite)

This is a great recipe for peanut butter lovers I made this over the weekend and it was awesome. I had a few family members over for dinner and made a buffet style meal and made this as one of the many dishes. They were very easy to make which I always love, especially when I am making loads of different dishes, I do not want anything time consuming. I served these with a homemade satay sauce which was lovely, but the meatballs are so moist and full of flavour, they are also really great by themselves. Ingredients


250g Minced beef
1/4 Cup crunchy peanut butter
1/4 Cup fresh breadcrumb
1/4 Cup grated carrot
1 Tablespoon tomato sauce
2 Spring onion, finely chopped
1 Teaspoon Vegemite
1 Teaspoon curry powder

Method

1. Combine all ingredients in a large bowl, mix well.

2. Shape into walnut sized balls. (I made mine larger, just preference.)

3. Bake in a shallow, lined baking dish at 200C for 20 minutes or until cooked through.

4. Serve with Satay Sauce.
